Prep Time 25 minutes Total Time 1 hour 45 minutes Servings 6 Calories 235 Ingredients: 1/4 cup soy sauce 1/4 cup Bragg's cider vinegar 2 tablespoons honey 2 tablespoons canola oil 8 large mushrooms, cut in half 2 green onions, minced 3 skinless, boneless chicken breast halves - cut into chunks Fresh Pineapple chunks from 1 pineapple 1.5 Red Bell Peppers 1 Onion skewers Directions In a mixing bowl, mix the Bragg's cider vinegar, soy sauce, honey, canola oil, and green onions. Place the mushrooms, onions, red bell pepper, pineapple and chicken into the mix, and stir to coat. Cover the bowl and marinate in the refrigerator at least 30 minutes. Preheat grill for high heat. Remove the mushrooms, onions, red bell pepper, pineapple and chicken from the marinade and shake off excess. Pour your marinade into a saucepan and bring to a boil over high heat. Reduce heat to medium and simmer for 10 minutes. Poke the chicken onto skewers so that they are secured. Alternate with mushroom halves, onion, red bell peppers and pineapple chunks. Oil the grill grate. Arrange skewers on the prepared grill and cook 15 to 20 minutes, brushing occasionally with remaining sauce mixture, until chicken juices run clear.
